Smoked Salmon for the Rest of Us

Posted by Ole On July - 21 - 2009

Followers of this blog know that when it comes to fish, salmon is the family favorite.  It is readily available, affordable when purchased in bulk, and quite versatile as evidenced here, here and here.  We do salmon many different ways and they’re all quite tasty, but in my opinion, this method takes the cake. Smoked salmon.  The words get the kids running towards the table no matter what time it is.  We like it with bagels and cream cheese for breakfast, mixed with mayo for a lunchtime... more

Burgered Out? Go Greek

Posted by Ole On July - 5 - 2009

Summer is great, picnics, pot lucks and back yard grill outs are plentiful, especially in Minnesota where these types of activities are off limits for six months out of the year.  Unfortunately for us, this situation can lead to busy schedules and multiple engagements per week.  And while we always like to socialize, the traditional fare of burgers, brats and hot dogs can wear a little thin, so this year we decided to bring a little flair to the picnic table. The inspiration stemmed from a recent... more

Jalapeno Cornbread: So Hot, So Sweet

Posted by Ole On June - 15 - 2009

To start off I have to say, this is not a grilling recipe.  I’ve never tried it on the grill, and I probably never will.  Certain things need stability – a high speed camera, a vintage moped and good cornbread.  The latter requires a type of stability that can only be provided by a highly predictable 400 degree oven.  Would it work on the grill?  Yeah, for the most part, but I can only guess that you would have varying areas of doneness depending on the temperament of your grill. ... more

Crab on the Grill: Keep Your Kitchen Cool

Posted by Ole On June - 5 - 2009

When it comes to grilling, some things are obvious.  Burgers, hot dogs, steaks, chicken.  But others are less obvious.  Pizza, pineapple, asparagus, crab.  Crab?  Yes, crab.  Why not crab?  That’s what I thought to myself a few years ago when we found ourselves with two pounds of crab legs and the desire to cook them somewhere other than in a big pot of boiling water in the middle of the summer. You see, around the O6 residence, we shy away from air conditioning unless it is unbearable... more

Super Garlic Toast – Flavor from the Side

Posted by Ole On May - 27 - 2009

A lot of work goes into main dishes.  For the most part, I tend to focus on the protein portion of our meals, but when possible, I like to double – even triple up on items that can be put on the grill for any given meal.  I’ve already talked about the asparagus that can be done on the grill so today I’ll talk about what is probably the most popular non-meat grillable in the house – my soon to be famous, Super Garlic Toast.   Normally, I’m not so boastful about my... more

The Juicy Lucy – A Memorial Day Gift

Posted by Ole On May - 25 - 2009

My employer was generous enough to give me Friday off in addition to Monday for Memorial Day this year, so I’ve decided to pass the generosity on with a recipe guaranteed to elevate your backyard BBQ to “best ever” status.  Today we’re doing a Twin Cities original – the Juicy Lucy. Now, even many native Minnesotans may be unsure as to what that is.  I have to admit that I was in the dark until I moved to Minneapolis eight years ago from Southern Minnesota.  One of... more

Leftovers Redone: Steak and Cheese, Please!

Posted by Shaina On May - 23 - 2009

A Philly cheesesteak isn’t something to mess with, so we didn’t. Instead, we created our own variety of steak sandwich, topped off with a mound of fresh grilled vegetables and a simple chipotle mayo for a bit of kick. It is the combination we keep coming back to. The vegetables balance the steak and cheese and serve to lighten things up a bit. I even topped mine with some iceberg we had sitting around taking up space to give a little crunch. For these we’re using leftover bacon-wrapped... more
