Fajitas are usually something I order at restaurants. I love to get a sizzling skillet full of peppers, onions, seasoned beef and a stack of warm tortillas. I’ve shared fried rice before, only that time there was chicken involved, and this time I turned to whatever the farmer’s market would supply me with. It’s not a secret that I love avocados. I buy 4 or so a week on a regular basis, and then I add chunks of them to salads, I spread them on burgers and sandwiches, and I love them as guacamole and chips.
