Thai Green Mango Salad

Ingredients
  • 1 unripe mango
  • 2 cups bean sprouts
  • 1 red pepper, julienned
  • 2 tablespoons rice vinegar
  • 3 tablespoons lime juice
  • 2 tablespoons fish sauce
  • 2 tablespoons honey or brown sugar
  • 1 teaspoon chili sauce
  • 1 clove garlic, minced
  • ½ cup cilantro leaves
  • 4 spring onions, chopped
Directions
  1. Peel and thinly slice the unripe mango into matchsticks and place in a large bowl. Add the bean sprouts and the red pepper. Sprinkle the rice vinegar over the top and toss to coat.
  2. In a small bowl, mix together the lime juice, fish sauce, honey/sugar, chili sauce, and the garlic. Whisk to combine, stirring until the sugar has dissolved.
  3. Before serving, pour the lime dressing over the mango. Add in the cilantro and spring onions, and stir to coat all the ingredients. Serve immediately.
