Bakery-Style Chocolate Chip Cookies

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon coarse salt
  • 1 cup packed brown sugar
  • 1 cup granulated sugar
  • 12 tablespoons (1½ sticks) unsalted butter, softened
  • 2 large eggs
  • 1 large egg yolk
  • 2 teaspoons vanilla
  • 12 ounces bittersweet (60-70%) chocolate, chunked
  • Flaked sea salt
  1. Sift the flour, baking soda, baking powder, and salt into a medium bowl and set aside.
  2. Place the room temperature butter in a mixing bowl and beat slightly. Add in the brown sugar and the granulated sugar. Beat for 3 minutes to cream, until the sugars become lighter and slightly puffed in appearance. Add in the eggs, egg yolk, and the vanilla. Mix until incorporated.
  3. Slowly add in the flour mixture until well mixed. Stir in the chocolate chunks.
  4. Scoop 3-ounces of dough (about ¼ cup each) and roll into a ball. Place the balls on a parchment-lined cookie sheet 5 inches apart (six per cookie sheet). Preheat the oven to 350ยบ F. Slide the cookies into your freezer while you prepare the next cookie sheet and wait for the oven to preheat.
  5. When the oven is preheated, remove the cookie sheet from the freezer, sprinkle the dough with sea salt, and place directly in the oven. Bake for 19-21 minutes until the cookies are golden brown. Remove the cookie sheet from the oven and allow the cookies to cool on the baking sheet for 10 minutes.
  6. After ten minutes, transfer the cookies to a wire rack until completely cool. Repeat with the remaining dough, chilling the cookie balls in the freezer briefly (about 10 minutes) before baking.
  7. For smaller cookies: Roll into 1.5-ounce balls of dough (about 2 tablespoons each), chill as directed above, and bake for 16-19 minutes.
