2-Ingredient Banana Pancakes: Cinnamon Variation

  • 1 banana
  • 2 eggs
  • 1 teaspoon vanilla
  • ½ teaspoon cinnamon
  • a pinch of salt
  • coconut oil or other cooking oil for griddle
  1. In a blender, combine all the ingredients and pulse until smooth.
  2. Heat a cast iron or other nonstick pan over medium heat. Lightly grease with coconut oil or other cooking oil. Pour about 2 tablespoons for each pancake onto the hot pan.
  3. Cook for 30-60 seconds, until tops are bubbly. Carefully flip and cook for 15-20 seconds on the opposite side. Repeat with all the remaining batter.
  4. Serve warm topped with nut butters, syrup, or a dusting of powdered sugar.
These make small, thin pancakes. It is more difficult to flip larger pancakes because they are delicate, so I recommend staying with the silver dollar size and making yourself a taller stack.
