Maybe you’ve already purchased another turkey and stored it in your freezer. If not, I want to convince you to go out and buy one this week at a discounted price. Just because you had your fill on roast turkey and mashed potatoes doesn’t mean you have to pass on that incredible deal at the local supermarket. This is the perfect time to stock your freezer full of last-minute meals, soups and casseroles that taste nothing like the Thanksgiving meal from last Thursday. Green bean casserole... more
Creamy Turkey and Mushroom Casserole
Even if I may not be a casserole fan for 85 96.75 percent of the year, the cold weather has me craving creamy mushrooms and wild rice all baked together into a belly-warming dish of deliciousness. I hope you’ll forgive me, but I’m going to talk about them (the mushrooms and rice) twice before I’m done. Here and again as a soup soon after. The casserole starts with white rice and boiling water and a bit of white wine. I start with mini portabellas, and I couldn’t pass up... more
Leftovers Redone: My Favorite Turkey Sandwich
We all know the feeling of the post-Thanksgiving hunger. You finally get hungry after the mashed potatoes, green bean casserole, dressing and turkey has had time to digest, and when you look in the fridge? Thanksgiving leftovers. Not what you were hoping for. Sure, a sandwich is always an option, but the thought of limp bread, cold Thanksgiving turkey and a slice of cheese doesn’t really have you clamoring to eat those leftovers either. That’s not going to sustain you after or during... more
Jalapeno Cornbread: So Hot, So Sweet
To start off I have to say, this is not a grilling recipe. I’ve never tried it on the grill, and I probably never will. Certain things need stability – a high speed camera, a vintage moped and good cornbread. The latter requires a type of stability that can only be provided by a highly predictable 400 degree oven. Would it work on the grill? Yeah, for the most part, but I can only guess that you would have varying areas of doneness depending on the temperament of your grill. ... more
Leftovers Redone: Steak and Cheese, Please!
A Philly cheesesteak isn’t something to mess with, so we didn’t. Instead, we created our own variety of steak sandwich, topped off with a mound of fresh grilled vegetables and a simple chipotle mayo for a bit of kick. It is the combination we keep coming back to. The vegetables balance the steak and cheese and serve to lighten things up a bit. I even topped mine with some iceberg we had sitting around taking up space to give a little crunch. For these we’re using leftover bacon-wrapped... more
Life After Ham: Hot Ham and Cheese Baked in Rosemary Bread
We had a lot of ham leftover from Easter this week, and something about leftover ham just doesn’t scream, “I would make a fantastic snack!” when I see it there, slimy and going pale in the fridge. In fact, I believe it is screaming, “Toss me in the garbage! Toss me in the garbage!” So, I don’t like ham. I’ll admit it. Not a fan. However, I can’t just throw away the free ham that was gifted to me. So, I turned it into a meal. Before I start, let... more
