Smoked Salmon for the Rest of Us

Posted by Ole On July - 21 - 2009

Followers of this blog know that when it comes to fish, salmon is the family favorite.  It is readily available, affordable when purchased in bulk, and quite versatile as evidenced here, here and here.  We do salmon many different ways and they’re all quite tasty, but in my opinion, this method takes the cake. Smoked salmon.  The words get the kids running towards the table no matter what time it is.  We like it with bagels and cream cheese for breakfast, mixed with mayo for a lunchtime... more

Make-Ahead Meals: Cornbread Dressing Chicken Casserole

Posted by Shaina On April - 25 - 2009

I have a confession to make. I do not like casseroles. I just don’t. I’ve eaten many a casserole in my day or, as they’re called here in the Midwest, “hotdish.” So, you’ll have to forgive me if I’m less than excited about this recipe. Yep, that’s right. One surefire way to save money is by stocking up on seasonal meats. Turkeys after Thanksgiving, ham after Christmas, corned beef after St. Patrick’s Day. While corned beef keeps longer because it is brined,... more

Chop, chop, brown the ground beef, stick it out on the table and let everyone assemble dinner for themselves. Nothing like getting everyone involved in the process. Really, it’s all about the guacamole for me, but that is not a subject for today. My second favorite thing about taco night is that it makes wonderful leftovers.... more
