Cinco de Mayo is just around the corner, and with the weather warming, it’s the perfect time to take out the grill for fish tacos and make yourself a margarita. Fajitas are usually something I order at restaurants. I love to get a sizzling skillet full of peppers, onions, seasoned beef and a stack of warm tortillas. The dish is always a feast for all the senses. When it comes to Mexican food at our house, we usually stick to tacos, nachos or burritos. There is a place in my heart that is occupied by a Chipotle burrito (or a bol). It’s a large place on account of the size factor, so it’s hard to miss. In fact, I don’t know that there are many days I would turn down a Chipotle burrito if it were offered to me. The appeal of Chipotle to me is the stretchy tortilla, the fragrant lime and cilantro rice, the guacamole mounded right near the end just before wrapping…the fact that I don’t need to get chili-corn salsa.... more

I like tacos. You like tacos. We all like tacos. Taco night happens to be one of my favorite nights. It’s right up there behind burrito night. It’s easy. Chop, chop, brown the ground beef, stick it out on the table and let everyone assemble dinner for themselves. Nothing like getting everyone involved in the process. Really, it’s all about the guacamole for me, but that is not a subject for today. My second favorite thing about taco night is that it makes wonderful leftovers.... more
