I did it. I survived last week. Just barely, but I made it. I have a less hectic schedule this week, a moment or two to relax and maybe do something for me, like take a photography class (Wednesday), and we may even squeeze a few things in there like an appointment with a plastic surgeon for the Kola Nut, soccer, t-ball, pictures for soccer and t-ball, a week of science camp for Kiwi, Kumquat’s 3rd birthday and a trip to the water park.
And I haven’t yet posted my zucchini bread recipe, mostly because I didn’t make it until last night, but I made it, and now I’m on the hunt for something else to do with the zucchini that continues to grow in the backyard. I’ll let you know what I come up with.
I’ll tell you a secret. We never made it grocery shopping last week. I stopped at Costco for milk and some produce 10 minutes before it closed one day while we were running an errand, but that was the extent. We stuck to our menu outside of Friday, when we managed to convince my youngest sister to come babysit before she left for a friend’s cabin for the last three weeks of her summer vacation. Not by coincidence, that was the meal we needed to shop for.
Monday – Pulled pork sandwiches, baked beans, cantaloupe salsa with a melon from the farm stand down the street
Tuesday – Grilled marinated chicken, Caprese salad, popovers
Wednesday – Buffalo chicken wings (we have wings left from when we made oyster wings a few weeks ago), grilled zucchini spears with sour cream and herb dipping sauce, homemade fries
Thursday – Shrimp and scallop linguini in a white wine sauce, salads, french bread
Friday – Cheeseburgers (sliders for the kids), corn on the cob, refrigerator pickles
