We are leaving early Thursday morning for our family vacation up to the Boundary Waters Canoe Area. I’ve been going there since I was Kiwi’s age, and I love being able to bring my kids and watching them experience everything. When I was little, we stayed in a small cabin out in the woods with no electricity or running water. We paddled a canoe around and portaged between lakes. Most of that is the same, except that my dad’s sister and her husband built a house in the middle of said nowhere. One that happens to be nicer than the one I live in on an everyday basis. Don’t worry, the canoes, the portages, the lack of anything other than wildlife are all the same. It’s just the sleeping accommodations that are…well, not really “roughing it.”
I’m still learning about my new camera, but it’s definitely nothing I mind doing. I’ll be packing my photography books for the 7-hour drive up the shore of Lake Superior. I’ll also be packing my laptop. Because I’m an addict. I’ll also be bringing this egg bake, my french toast bake, and about a dozen baked goods I’m working on right at this moment.
Monday – Reubens (because I never made the corned beef last week), salads
Tuesday – Martha’s chicken piccata, because I was watching an episode of Diners , Drive-Ins and Dives and someone made that in some diner in Middle America. It looked wonderful. Served with a roll or two. A side of zucchini. (There is going to be a lot of zucchini eaten around here because it is out of control in the garden.)
Wednesday – Our twist on Penne a la Betsy from PW, although I’m not sure I should be tweaking something so obviously perfect, with snap peas and anything else that needs to be eaten before we need to leave.
Thursday – Exploring the finest Minnesota’s North Shore has to offer. A trip to Betty’s Pies may be in order, and maybe a stop in Grand Marais at The Angry Trout Cafe before we head up the Gunflint Trail
Friday – Pulled pork and ribs, coleslaw, baked beans, cornbread “Up North” in the middle of nature, surrounded by granite counters.
