I’m back from Blissdom, and I have to admit, as much as I am thrilled to be here with my kids and my husband, I’m sad it’s over. I had a fantastic time, met so many wonderful women, and I learned a lot too. I also completed the two missing pieces of my…cake?…and was able to spend some time with my friends Mandi and Tara while I was there. It’s been a long time coming, and I was so grateful for a chance to get together in person.
Ole has been holding down the fort, and he made my day today by planning the menu and doing the grocery shopping, which means my week is right on schedule like I was here the whole time and not in Nashville eating dinner with other bloggers just like myself in the giant biodome that is Opryland.
Monday – Brick grilled chicken with scallion lime butter, quinoa salad and steamed vegetables. (Ole didn’t quite get to this last week, and he’s decided to make two of them so we’ll have leftovers to add to another recipe on Thursday)
Tuesday – Salmon and Asian pesto potstickers (I am beyond excited to try these!) and vegetable fried rice because I came home to a 25-lb bag of jasmine rice purchased by my husband while I was gone.
Wednesday – French toast casserole, bacon, pineapple and strawberries
Thursday – Chicken spaghetti (which also happens to be the only casserole Ole will eat), spring mix salads
Friday – Juicy Lucys, coleslaw and baked beans
Last week on Food for My Family I told you all about cream cheese wontons and left you hanging on the General Tso’s. I’ll fix that. If you missed it, definitely check out the Blog Aid cookbook. I can’t say enough about Julie and everyone that worked together to make this dream a reality. It is so generous and selfless and speaks volumes about the kind of people this community is filled with.

Your French Toast bake looks so yummy. I have made the sweet version of this in the past but it comes out more like bread pudding. Made the salmon asian pesto wraps and they are hands down one of the best salmon recipes we’ve EVER eaten!! And we live in Alaska and eat salmon all the time!! I had a hard time wrapping them – couldn’t figure this part out!! They were falling apart. The wrappers were 6 inch in diameter. These were such a hit with my husband! Can’t wait to make them again – and have them look pretty too!
