It’s here. The end of summer. I’m both excited for school to start and to have the kids in a more stable routine, but I’m sad that lazy pajama mornings and my afternoon projects with Kiwi and Kola Nut are coming to an end. To celebrate the end of summer, we find ourselves at the Minnesota State Fair every year – multiple times – eating, riding, people watching and walking. The weather was great, and the kids were troopers.
Tomorrow is the last day before school and my list of things to do seems to keep growing. We’ll be hosting a barbecue in the afternoon and then all night we’re going to be laying out clothes and getting school bags ready for Tuesday. We did our grocery shopping this morning, and I am so glad it’s done, everything’s in the fridge and all I have to do is work on getting back into the school schedule.
Monday – Smoked baby back ribs, baked potato salad, jalapeño cornbread, cheesecake and whatever the neighbors bring.
Tuesday – Grilled salmon, rice and steamed broccoli
Wednesday – Make-ahead manicotti, grilled peppers and garlic bread
Thursday – Bacon-wrapped beef tenderloin, spring mix salads and crash hot potatoes
Friday – Whole grilled chicken, popovers, Greek orzo pasta salad
