1/2 cup butter, softened
1/2 cup almond butter
1/4 cup honey
1/4 cup sugar
1/2 cup brown sugar
1 egg
1/2 teaspoon vanilla
1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 small-medium apple, diced (about 1/2 cup)
Preheat oven to 375° F and line baking sheets with parchment or silicon baking mats. In a large mixing bowl cream together butter, almond butter, honey and sugars. Mix in egg and vanilla until thoroughly combined. In a separate bowl, whisk together flour, baking soda and salt. Add to the butters and mix. Stir in diced apples.
Using a medium scoop, scoop cookies 2-3″ apart on baking sheets. Bake at 375° F for 10-12 minutes until edges are golden brown and centers are set. Remove from oven and allow to cool slightly on baking sheets before moving to wire racks to cool completely.
Makes 2 to 2 1/2 dozen cookies.
