1 lb navy beans
6 oz pork belly (half a package; remove hard portion of fat and save; cube the rest)
2 tsp baking soda
1 onion sliced
1/4 cup molasses
3 tbsp brown sugar
2 tsp ground mustard
2 tbsp ketchup
Soak beans in water overnight. Drain and add the beans, baking soda and pork fat to a large pot with enough water to cover beans by one inch. Boil for 10 minutes. Drain liquid to a bowl and add molasses, brown sugar, mustard and ketchup. Cover the bottom of a heavy baking dish with a layer of onions and cubed pork then a layer of beans. Repeat the layers until all the beans are gone (should be about2 or 3 layers). Pour liquid mixture over the top and cover. Bake at 350° F for 4 hours.
