The Mushroom Council is reaching out this month to support of City of Hope and Breast Cancer Awareness Month. Did you know mushrooms are a fabulous meat substitute and high in vitamins? Plus, a little giveaway for you, too!
I never really considered the nutritional benefits of mushrooms. I knew they didn’t contain any fat, and because I enjoyed eating them I happily popped them into meals and pasta sauces without a second thought. Little did I know, I was loading up on vitamin D, vitamin B and antioxidants for very few calories and plenty of flavor.
Just this summer I shared my new favorite burger recipe that contains absolutely no meat at all, instead using halloumi cheese and portabella mushrooms as a substitute for burger and bun. Turns out heaven on a bun is really fresh basil leaves and halloumi tucked inside two mushrooms. Gluten free and good for you.
In my family there is one mushroom holdout. He’s a smart lad despite his mushroom-hating tendencies and the only one of my children with the same eye color as me. (I always thought I’d have more than one brown-eyed monster, but instead the rest are all steely grey.) Still, he’s become quite adventurous at trying his mushrooms on for size, even when he doesn’t think he’ll like them, which is often half the battle.
To get Kjell interested in mushrooms, we love switching up how we serve them, and he’s found that he actually likes them prepared several different ways, including on homemade pizzas. Here are just a handful of ways to try mushrooms on for size:

The Mushroom Council has supported leading research and treatment facility City of hope since 2002 with $750,000 in grants towards their research and will be donating another $50,000 this fall. My mother in law is actually a breast cancer nurse, so the thought of how to get women in for their screenings is a constant conversation whenever I see her. I pretty much will buy anything pink during the month of October, and just telling some of the MIL’s stories of prevention when people blanch at the idea of a mammogram really helps bring some folks around.

My Mother-In-Law is a Breast Cancer Survivor. Every year I walk in our local Race for the Cure with her, my two young daughters, my own mother, and other relatives. It is important to me that my daughters start understanding and supporting this cause that has, unknowingly to them, touched their lives. They are still to young to understand the disease itself, but we have conversations every year around the time of the Race. They both recognize the Pink Ribbon and say, “Mommy, it’s the Race for the Cure!”
