In the car again, on the way back from the Boundary Waters Canoe Area. Our trip started cold and rainy, but the weather turned around for the last 36 hours. The clouds left and we were able to see the sun set over the lakes and then rise the next morning over the palisade on Clearwater Lake. The kids saw waterfalls without getting eaten alive by mosquitoes today: a successful way to end our long weekend in the woods.
I will say that after all the heavy meat and carb camping-fare, a fish fry at Trail Center on the Gunflint Trail and just a small amount of fresh produce in general, this week’s menu is focused mostly on lighter protein options, less carbs and more of the green stuff. We did sneak the bacon-wrapped tenderloin in towards the end of the week because it’s in our freezer waiting to be consumed and requires very little effort…and I am not looking forward to grocery shopping tomorrow.
Monday – Fire-grilled shrimp, pineapple kabobs, quinoa salad, grilled sweet peppers
Tuesday – Asian chicken salads, fresh fruit salad
Wednesday – Tuna pasta salad on spring mix greens with garlic toast
Thursday – Bacon-wrapped beef tenderloin, Caesar salad, carrot sticks and pepper spears
Friday – Oyster wings, steamed rice, zucchini slaw
